Taco Soup
Freezer Meal.

Ingredients
  1. 1 LB ground beef
  2. 1 Small yellow onion, diced {substitute with 1/2 bag frozen chopped onion}
  3. 3 Cloves garlic, minced
  4. 1 Cup frozen corn
  5. 4 Oz can diced green chiles
  6. 28 Oz can diced tomatoes, undrained
  7. 1 Pkg taco seasoning or this homemade version {1 tbs chili powder, 1 tsp pepper, and 1/2 tsp of the following: salt, ground cumin, red pepper flakes, paprika, ground oregano, garlic powder, and onion powder}
  8. 4 Cups beef broth {not needed until day of cooking}
Materials
  1. 1 gallon- sized plastic freezer bag.
To Freeze and Cook Later
  1. Label your freezer bag with the name of the recipe, cooking instructions, and use-by-date {three months from when meal was prepped}.
  2. Add all ingredients except broth to freezer bag.
  3. Remove as much air as possible, seal and freeze up to three months.
  4. When ready to cook, thaw freezer bag overnight in refrigerator or in water in the morning and follow cooking directions. {Don't forget to add broth!}
Directions
  1. Combine all ingredients in crockpot and cook on "low" for 6-8 hours.
  2. Break apart ground beef and stir.
Optional
  1. Top with shredded cheese, sour cream, and green onions. Serve with tortilla chips.
Notes
  1. Double recipe to make two freezer meals.
