Cheesy Tortellini

Freezer Meal.

Ingredients
- 1 TBS olive oil
- 1 Lb ground beef
- 1 Small onion, diced {substitute with 1/2 bag frozen chopped onion}
- 2 Cloves garlic, minced
- 28 oz can diced Italian tomatoes, undrained
- 10 oz can diced tomatoes and green chiles, undrained
- 1/2 TSP dried oregano
- 1/2 TSP dried basil
- 1/4 TSP crushed red pepper flakes {optional}
- 1/4 TSP ground black pepper
- 1/8 TSP salt
- 19 oz bag of frozen tortellini {not needed until day of cooking}
- 1 Cup shredded mozzarella cheese
- 1/2 Cup shredded cheddar cheese
- 2 TBS Chopped fresh parsley
Materials
- 1 gallon- sized plastic freezer bag.
To Freeze and Cook Later
- Label your freezer bag with the name of the recipe, cooking instructions, and use-by-date {three months from when meal was prepped}.
- Add all ingredients to freezer bag except tortellini, parsley and cheese.
- Remove as much air as possible, seal and freeze up to three months.
- When ready to cook, thaw freezer bag overnight in refrigerator or in water in the morning and follow cooking directions.
Directions
- Add contents of freezer bag to crockpot.
- Cook on "low" 6- 8 hours, or until beef is completely cooked. Then break apart.
- Stir in cheesy tortellini and cook an additional 30 minutes.
- Stir one last time then top with shredded cheese.
- Serve and garnish with parsley.
Notes
- Double recipe to make two freezer meals.
