I do not claim this recipe as my own. I am simply sharing it on my blog for others to be able to find it. I like to have all the recipes I like in one place.

Cheesy Tortellini
Freezer Meal.
  1. 1 TBS olive oil
  2. 1 Lb ground beef
  3. 1 Small onion, diced {substitute with 1/2 bag frozen chopped onion}
  4. 2 Cloves garlic, minced
  5. 28 oz can diced Italian tomatoes, undrained
  6. 10 oz can diced tomatoes and green chiles, undrained
  7. 1/2 TSP dried oregano
  8. 1/2 TSP dried basil
  9. 1/4 TSP crushed red pepper flakes {optional}
  10. 1/4 TSP ground black pepper
  11. 1/8 TSP salt
  12. 19 oz bag of frozen tortellini {not needed until day of cooking}
  13. 1 Cup shredded mozzarella cheese
  14. 1/2 Cup shredded cheddar cheese
  15. 2 TBS Chopped fresh parsley
  1. 1 gallon- sized plastic freezer bag.
To Freeze and Cook Later
  1. Label your freezer bag with the name of the recipe, cooking instructions, and use-by-date {three months from when meal was prepped}.
  2. Add all ingredients to freezer bag except tortellini, parsley and cheese.
  3. Remove as much air as possible, seal and freeze up to three months.
  4. When ready to cook, thaw freezer bag overnight in refrigerator or in water in the morning and follow cooking directions.
  1. Add contents of freezer bag to crockpot.
  2. Cook on "low" 6- 8 hours, or until beef is completely cooked. Then break apart.
  3. Stir in cheesy tortellini and cook an additional 30 minutes.
  4. Stir one last time then top with shredded cheese.
  5. Serve and garnish with parsley.
  1. Double recipe to make two freezer meals.
