I do not claim this recipe as my own. I am simply sharing it on my blog for others to be able to find it. I like to have all the recipes I like in one place.

Shredded Chicken Quesadillas
Freezer Meal.
  1. 1 Lb boneless skinless chicken breasts
  2. 1 Small onion, diced {substitute with 1/2 bag frozen chopped onion}
  3. 1 TBS extra virgin olive oil
  4. 1 TBS lime juice
  5. 1 Pkg taco seasoning mix or {homemade: 1 TBS chili powder, 1 TSP pepper, and 1/2 TSP of the following: salt, ground cumin, red pepper flakes, paprika, ground oregano, garlic powder, and onion powder}
  6. Flour tortillas
  7. 1/2 Lb shredded cheddar cheese {not needed until day of cooking}
  1. 1 gallon- sized plastic freezer bag.
To Freeze and Cook Later
  1. Label your freezer bag with the name of the recipe, cooking instructions, and use-by-date {three months from when meal was prepped}.
  2. Add all ingredients to freezer bag except shredded cheese.
  3. Remove as much air as possible, seal and freeze up to three months.
  4. When ready to cook, thaw freezer bag overnight in refrigerator or in water in the morning and follow cooking directions.
  1. Add contents of freezer bag to crockpot.
  2. Cook on "low" 6- 8 hours.
  3. Shred chicken {can use a potato masher}.
  4. Place shredded chicken in tortillas with shredded cheese and broil in the oven for 60-90 seconds until golden brown or can brown on stove top.
  5. Cut into triangles and serve.
  6. Serve with sour cream, guacamole, salsa, corn, or any of your favorite toppings.
  1. Double recipe to make two freezer meals.
