I do not claim this recipe as my own. I am simply sharing it on my blog for others to be able to find it. I like to have all the recipes I like in one place.

{Recipe: Slow Cooker/Freezer Meal: Italian Pork Roast}
Freezer Meal.
  1. 4 Carrots peeled and diced {substitute with a bag of frozen peas and carrots}
  2. 2 Small potatoes, peeled and cut into 1 inch chunks {8 oz or 1.5 cups}
  3. 2 Ribs of celery, diced {about 2/3 cups}
  4. 1 Small onion, diced {substitute with 1/2 bag frozen chopped onion}
  5. 2 Garlic cloves, minced {1 tsp}
  6. 1/2 cup uncooked medium barley {substitute with {frozen bird's eye superfood blends barely & kale}
  7. 1/4 Tsp pepper
  8. 1/8 Tsp ground thyme
  9. 4 Tsp Chicken bullion granules
  10. 8 Oz bone-in ham steak, cut into 1/2 inch pieces {1 cup}
  11. 12 Oz evaporated milk {not needed until day of cooking}
  12. 4 Cups water {not needed until day of cooking}
  1. 1 gallon- sized plastic freezer bag.
To Freeze and Cook Later
  1. Label your freezer bag with the name of the recipe, cooking instructions, and use-by-date {three months from when meal was prepped}.
  2. Add all ingredients to freezer bag except water and evaporated milk.
  3. Remove as much air as possible, seal and freeze up to three months.
  4. When ready to cook, thaw freezer bag overnight in refrigerator or in water in the morning and follow cooking directions.
  1. Add contents of freezer bag to crockpot.
  2. Add 4 cups of water.
  3. Cook on "low" 6- 8 hours, or until carrots and potatoes are soft.
  4. Stir in evaporated milk and continue to cook an additional 15 mins.
  5. Stir one last time before serving.
  1. Double recipe to make two freezer meals.
