Chipotle Pot Roast with Carrots

Ingredients
- 2-pound boneless beef chuck shoulder roast
- 2 pounds carrots, peeled and chopped into 1-inch pieces
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 packet of McCormick Grill Mates Chipotle seasoning mix {can sub with taco seasoning}
Instructions
- Add to crock pot and cook on “low” setting for 6 hours in a 6-quart crock pot or 8-10 hours in a 4-quart crock pot.
- Shred meat.
- Serve with rice.
